Throughout the weekends of summer, Niagara College Teaching winery will be sharing its knowledge with consumers. Weekends throughout the summer will feature mini educational seminars and demonstrations.

Pick the Pinot You will we taught the ABC’s of blind tasting. Learn how to identify common aromatic and taste characteristics of three wine varietals, industry terminology, and what to look for in a quality wine. After your session you will be asked to try to Pick the Pinot from a flight of unidentified wines.

Decant, do it! Learn why decanting improves your wine. You will be taught how to properly decant and aerate your wines for maximum flavours and aromas. De-mystify decanter styles and shapes. Taste and compare undecanted and decanted wines to prove just how much you need to do it!

New vintage Grille. Niagara College will once again be hosting the New Vintage Grille on its scenic campus grounds at the foot of the escarpment. Niagara’s finest wineries will be featuring some of their new vintage wines along side of food prepared by the region’s top chefs. Celebrity chef Rob Rainford, from the Food Network’s License to Grill and Anna Olson host of Sugar will be demonstrating great recipes for summer. While at Niagara College visit our on-campus wine store. Niagara College Teaching Winery will be featuring 2007 Riesling, 2006 Gamay Noir, 2006 Pinot Noir.

Be seduced by the beautiful flavours and aromas that enhance an oak-aged wine. Learn the reasons for barrel aging and how oak influences the quality and flavour of the wine. You will taste and compare unoaked to oaked wines while a knowledgeable staff member helps you identify characteristic aromas that oak imparts into the wine.

Wine glasses come in all shapes and sizes; does the size and shape really matter? Experience the difference the correct glass can make to the aromas and flavours of the wine. You will taste and compare several wines in different glasses and learn about the different tasting areas on your tongue and why and how our senses perceive taste. A professional staff member will explain the science behind the design of wine glasses.

Whose fault is it?
(identifying common faults in Wine)
Your wine representative will explain how and why faults occur in wine; help you identify them with sensory samples. Teach you what to look for visually and how to deal with problem wines. You will learn about closures (cork vs. screw cap and tetrapaks) and proper storage of wine to prevent problems.

Chardonn-Eh!

Niagara College has consistently won medals for its outstanding Chardonnay! Sample a flight of Award winning Chardonnay including back vintages. Compare an oaked Chardonnay to an unoaked Chardonnay and learn about the different winemaking processes that give the wine its distinctive flavour and smell. Learn to identify the grape and leaf of the vine, as well as the aromas that come from oak aging. Proper glassware and food pairing will be covered. Drink Canadian eh!

Seductions of Oak
(effects of oak on wine)
Increase your knowledge of how Oak affects the wine you drink. You too can become an expert on oak influences. The demonstration will teach you about the varieties of oak, barrel aging, uses of barrels and oak chips, as well as the influences of oak on the final product. Learn how to identify the oak aromas in a glass of wine by sampling three wines and comparing unoaked wine to barrel-aged wine. You will leave with an increased understanding of the effects of oak on wine and the aging process.

A sensory tour of wine
Learn the proper terminology to describe the sight, aromas and flavours of wine

You can build your knowledge of professional wine tasting by understanding the nuances of individual varieties and styles of winemaking.
